Dr Rosemary Stanton, OAM
PhD
Rosemary is one of Australasia's best-known nutritionists. She is author of many scientific papers on various nutrition and public health topics, 32 books and over 3200 articles for magazines and newspapers. Rosemary has been a regular presenter on television, rarely has a day without a radio interview and is a popular lecturer.
Rosemary is currently a Visiting Fellow in the School of Medicine at the University of New South Wales and is a member of many advisory and expert committees.
Rosemary maintains a close liaison with the consumer viewpoint and is widely regarded as a spokesperson that is not beholden to any one interest group. Her major aim is to change Australians' poor eating habits so that people have healthier diets, and eat more enjoyable foods, which create minimal environmental damage. She has been awarded an Order of Australia for her services to community health through education in nutrition and dietetics.
Nicole Senior

Nicole is an Accredited Practising Dietitian & Nutritionist, entertaining speaker and author of the recently published "Eat to Beat Cholesterol". A fantastic nutrition reference and cookbook for which she immersed herself in the best advice research has to offer on heart-healthy eating, and formed an excellent collaboration with an award winning recipe developer and uber-foodie to produce do-able recipes that taste fabulous.
As well as working up close and personal with private clients wanting to eat better in her Sydney practice, she is working to spread the word about nutritional wellbeing as a nutrition consultant to organisations and Nutrition Editor for Australia's biggest selling food magazine, Super Food Ideas.
Dr Yasmine Probst, PhD
APD
Yasmine is a Research Fellow and Syndicate Projects Manager with the National Centre of Excellence in Functional Foods at the University of Wollongong. In this role Yasmine works with food companies to encourage food innovation and new food product development. Her current projects focus on cognitive and gut health.
Yasmine's PhD research involved the development of an automated dietary assessment website. She is now the chief investigator on an NHMRC development grant which aims to take the website closer to becoming a commercial product. Yasmine is an Accredited Practising Dietitian with a Graduate Certificate in Business who has presented at a number of national and international conferences.
Matt O'Neill
BSpSc, MSc(Nut&Diet), APD
Matt is the name behind SmartShape, from which he provides inspiring weight loss tips, tools and training for health professionals and passionate consumers. Matt is an Accredited Practising Dietitian and speaker who has entertained audiences in eight countries.
Matt's innovative product range, including the NutritionPT Programme Kit, SmartShape Tip Sheets Set, Seminar Presenter's Package and the Step Into Shape Challenge are designed to give greater impact to nutrition and fitness education.
Matt has recently developed Australia's first online Certificate in Weight Management and is publisher of FatLossNews.com, a bi-monthly online, print and audio podcast review of current research in weight management.
Before founding SmartShape, Matt was the Nutritionist and Senior Food Policy Officer for the Australian Consumers' Association (Choice Magazine), where he was a consumer advocate fighting the misleading promotion of slimming treatments. He continues to do this with regular media appearances.
Penny Hunking

Penny is Managing Director of Energise Nutrition Ltd and Founder of the Re-Energise event in the UK. In a career spanning some 30 years she has worked with the who's who of food companies, fitness organisations and government bodies helping them share healthy eating messages with consumers.
Penny is a seasoned media commentator who has authored and contributed to ten books on all aspects of food, fitness and special diets. She has written for the UK Food Standards Agency consumer website and her company helped provide the phase one nutrition training to health professionals for the Department of Health `Healthy Start' programme for low income mothers.
Penny is a passionate advocate for healthy, enjoyable eating with an incredible know-how for getting good nutrition messages heard and understood. She is a Registered Dietitian and a member of the British Dietetic Association, the Nutrition Society, Nutritionists in Industry and Dietitians in Sport and Exercise Nutrition. But life is not all hard work; she loves scuba diving, water skiing, travel, cookery and eating out.
